Fall Apple Coffee Cake

Apple Coffee Cake

1/2 cup butter 1 tsp baking powder

1 cup sugar 1 tsp baking soda

2 eggs 1 cup of sour cream

1 tsp. Vanilla 2 cups of chopped apples

2 cups of flour 1/4 cup of milk

1/2 tsp of salt

Preheat oven to 350 degrees

Grease 2 cake pans

In a mixing bowl or stand mixer, cream butter and sugar until light and fluffy.

Add eggs, one at a time, and vanilla and mix well.

Combine flour, baking soda, baking powder and salt; add to the batter alternating with the sour cream until mixed well.

Add milk and mix and stir in the apples using a wooden spoon.

Lastly, transfer mix to the cake pans.

Topping

3/4 cup of packed brown sugar

1 tsp cinnamon

2 tablespoons of cold butter

Combine brown sugar and cinnamon along with the cold butter until it crumbles. Then, sprinkle over the top of the cake batter in the pan. Bake at 350 degrees for 30-35 minutes.

Enjoy with cold vanilla ice cream or a hot pumpkin spiced latte.
